Mushroom Soup Recipe
Ingredients
For 3 people
- 500g fresh mushrooms
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 2 tbsp butter
- ¼ cup cornstarch
- 2 cups chicken broth
- 2 cups water
- ½ cup cooking cream
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
Instructions
Wash & slice the mushrooms.
Preheat olive oil in a pot and stir fry the garlic until fragrant.
Add sliced mushrooms and cook until all the moisture is released and all the liquid is evaporated.
Add butter and cornstarch and stir to coat the mushrooms from all sides.
Pour broth and water. Season with salt and pepper and bring to a boil. Simmer mixture over medium low heat until cooked through, around 10 minutes.
Process the mixture in the blender until you get a creamy mixture.
Return the soup to the pot. Add cooking cream and lemon juice. Simmer for 5 additional minutes. Serve hot.
