Turkish Lentil Soup

Ingredients

For 5 people

  • ‎1 cup red lentils‎
  • ‎7 cups vegetable stock‎
  • ‎1 large-sized chopped onion
  • ‎1 large-sized cubed carrot
  • ‎4 cloves crushed garlic
  • ‎2 tbsp tomato paste‎
  • ‎1 tsp cumin‎
  • ‎¼ tsp red chili pepper‎
  • ‎¾ tsp salt‎
  • ‎1 cup croutons‎
  • ‎1 sliced lemon‎

Instructions

Combine in a big pot the lentils, stock, carrots, onion and garlic.‎

Simmer ingredients over medium heat for 20 min until cooked through.‎

Add tomato paste and season with salt, cumin and red chili pepper.‎

Remove pot from the heat and leave aside until cooled.‎

Place mixture in ULTRABLEND + and use the “soup” function to get a smooth mixture.‎

Serve soup immediately with croutons and lemon slices. ‎
