Sesame and Date Balls Recipe
Ingredients
For 5 people
- 7-10 dates (optional: soak in water to rehydrate)
- a handful of goji berries
- a handful of walnuts
- sprouted grains (oats/buckwheat)
- dried or fresh pollen (can be bought frozen in organic food shops)
- sesame seeds (to roll the energy balls)
Instructions
Put everything into ULTRABLEND + and select the “nuts” function. Lightly blend, leaving some small pieces in the mixture.
Stop the blender when you have your desired consistency. The mixture shouldn't be too thin; it should resemble a paste.
Take a spoonful of the mixture and roll in the palm of your hand.
Then roll in the sesame seeds and place in the refrigerator.
Tips
Germination removes some of the anti-nutrients, called phytates, from the grain's hull. (Phytates are present in whole grains). These phytates complex with minerals and can therefore reduce our mineral intake. And that would be a shame! Choosing refined grains (without their hulls) isn't a good idea as they have a very high glyceamicindex, which tires the pancreas and results in a higher sugar uptake and low blood sugar events. In addition, many vitamins and other nutrients are only found in the outer hull of grains and pulses. Fresh pollen is packed with vitamins, enzymes, micro-nutrients, and probiotics. Pollen facilitates digestion and detoxification and is a good source of minerals. Avoid pollen if you are allergic to hive products.
