Delicious Yogurt Cake Recipe
Ingredients
For 15 people
- 3 cups all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 1½ cups sugar
- 1½ cups yogurt
- 1 cup vegetable oil
- 4 large eggs
- 1 tsp vanilla extract
- To serve:
- 150 g sifted powdered sugar
- 4 tbsp milk
- 1 tsp vanilla extract
- 1 cup red berries
- 1 cup blueberries
- Fresh mint
Instructions
Preheat the oven to 180⁰C and coat a loaf pan with some butter and sprinkle with flour.
In a medium bowl, mix flour, baking powder and salt. Leave aside.
Combine eggs, sugar, vanilla extract, oil and yogurt in the cowl of your kitchen machine.
Using the whisk attachment, whisk the ingredients until combined.
Fold in flour mixture gradually whisking on low speed until combined.
Pour the mixture in the pan and bake for 55-60 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Remove cake from oven and allow to cool to room temperature.
Place sifted sugar and vanilla extract in a small bowl. Pour milk gradually until you get a smooth pourable glaze.
Pour mixture over cake and decorate with red berries, blueberries and mint.
