Delicious carrot cake
Ingredients
For 6 people
- Oil: 1 cup
- Brown sugar: 1 cup
- Eggs: 3
- Self-rising flour: 11/2 cups
- Bicarbonate of soda: 1 tsp
- Cinnamon: 2 tsps
- Salt
- Large carrots: 2
- Icing:
- Philadelphia cheese: 1 pack
- Icing sugar: 2 cups
- Lemon juice: 2 tsps
Instructions
Preheat the oven to 180 c.
Beat oil, sugar and eggs until well combined.
Add sifted flour, bicarbonate of soda cinnamon and salt.
Fold in carrots, pour the mixture into greased 20 cm round cake.
Place on low rack, bake for 22-25 minutes.
For the icing, mix all the remaining ingredients and spread onto the cooled cake.
