Kebbeh roll with pistachios
Ingredients
For 6 people
- To prepare the kebbeh roll:
- Bulgur: 1 kg
- Meat: 1 kg
- Onion: 1
- Salt: to taste
- Black pepper: to taste
- Cumin: to taste
- Mixed pepper: a pinch
- To prepare the filling:
- Lamb: 1 kg
- Pistachios: 1 cup
- Black pepper: to taste
- Cinnamon: to taste
- Ghee
Instructions
Soak the bulgur in cold water for a little time then drain and grind for 3 times using the Moulinex Masterchef Gourmet head mincer.
Mince half of the meat finely and the other half coarsely using the Moulinex Masterchef head mincer.
To prepare the filling: fry the coarsely minced meat adding the spices and leave aside until cold. Mix it with some of the finely minced raw meat and the pistachios.
Mix the remaining finely minced raw meat with the bulgur until you have a well-combined paste.
Spread a part of the meat paste on a piece of parchment paper and add a part of the filling in the center. Roll the parchment paper from one of the edges so you get a kebbeh roll.
Move gently to the tray and bake in the oven on medium heat until done.
